Sunday Morning Pantry Granola

There is nothing better than Sunday morning.  Sunday’s are my rest days.  After a long week of school, teenagers, and sports, there is nothing better than cooking.  And what’s even better is not having to go to the grocery store!

1 1/4 C Gluten Free Granola (I had quick on hand)

1/3 C unsweetened dried, coconut (largish shavings)

1 T sesame seeds

2 T flax seeds

1 T chia seeds

3-4 T pumpkin seeds

3-4 T pecans, rough smashed with fingers

1/2 t pumpkin spice or cinnamon

1 t cinnamon nibs

dried fruit of choice

1/4 C real maple syrup

1 T coconut manna

Preheat oven to 350F

1. Spray a cookie sheet with cooking spray

2. Add all the dry ingredients except fruit, syrup and coconut manna and put in a bowl

3. Warm syrup and manna in microwave until manna melts and add to dry ingredients. Mix well and pour on prepared pan

4. Bake for about 15 minutes until coconut is browning. Let cool, it will crunch up as it cools. If you are using old fashioned oats that are not quick cooking they will take longer.
