Don’t the words cheese ball shoot you right back to the 80’s? For me it does and it also conjures up memories of Christmas parties! Back then, there was always a cheese ball on the table with Ritz crackers. Gosh, I haven’t eaten a Ritz cracker in years! We can’t get them here in Hong Kong.
I still love a good cheese ball! This spread can be made into a ball and coated with chopped fresh parsley or toasted pecans or almonds. You can also just spoon it into a bowl and garnish with some chopped dried fruit.

Holiday Cream Cheese Spread
If you are making this into a ball for a party you will need to double recipe
1 8oz tub of Philadelphia Cream Cheese Light, softened a bit (I prefer the tub cream cheese here in Hong Kong as opposed to the bar. The bars are made in Australia and taste slightly different from the US cream cheese which is where the tubs are from)
8-10 dried apricots, chopped
1/4 C dried cranberries, chopped
1/4 C pecans, toasted and chopped
1/4 C scallions or green onion (optional, I left these out)
Combine all ingredients and serve with your favorite crackers or crudites
