Quick Tomato Soup

Like I said in the tuna melt post, I grew up on tuna sandwiches with mayo on white bread.   I also grew up on popping open a can of tomato soup for dunking.  Making tomato soup is really easy.  Yes, tinned (that’s canned to us Americans) tomatoes are still canned, but using them as a base is great because you can add whatever you like.

Easy Tomato Soup

2 T olive oil

2 cloves garlic, chopped finely

2 cans tomatoes (chopped, diced or whole is fine)

2-3 T brown sugar

1.  Heat oil and saute garlic for a minute.

2.  Add tomatoes and brown sugar and cook for about 15 minutes on low heat.

3.  Puree to your liking, chunky or smooth
