Peppermint Bark

This is one of my all time favorite Christmas recipes.  This recipe is fast, everyone will think you spent hours in the kitchen, and you don’t need to heat the oven:)  Oops, just gave away my secrets!

For the past 5 years or so I have been getting the ingredients in the US from shopbakersnook.com  I use the super white merckens and the peppermint candy crunch to whip up this Christmas treat!  It makes a perfect hostess gift and is very pretty and festive.

If you can’t get these exact ingredients any white chocolate melting buttons (regular white chocolate chips are not good for this recipe, they don’t melt well and are to sweet) and candy canes can be used.

Giving this to your neighbors, a priest, teacher or coach will make their day and you will feel good too:)

Peppermint Bark

1 lb super white merckens

1/2 lb peppermint candy crunch

1 sheet heavy duty aluminum foil, about 2 feet long

1.  Put the white chocolate in a microwave safe glass bowl and melt slowly on 80% power in 1 minute increments, stirring after each minute.

2.  Once chocolate has melted add the peppermint candy crunch and stir.

3.  Immediately pour onto aluminum foil and using a rubber spatula to spread as thin as you can and let cool until set.

4.  Once the chocolate has set break into pieces and store in an air tight container.  This will keep all month.
