It’s back to school time after the holidays and that means setting an alarm clock and packing lunches. This salad is very versatile and very healthy. If you made a resolution to eat healthy, this salad is for you.
If your resolution was to start exercising, learn a new skill or quit smoking and you are already having trouble following through, try a spiritual resolution! It can take as little as 5 minutes. Once you become disciplined you will have no problem making that time longer. Some ideas are: read a bible in a year, join an email list of an inspirational website, or check your local church for ideas or classes. There are so many wonderful ways to make your spiritual journey more meaningful. Once you do, you may find yourself following through with your resolutions.

Barley with Fresh Herbs and Edamame
This salad will ensure your kids have a healthy, flavorful lunch that will keep them full until they get home. You can use whatever herbs and vegetables you have on hand
1 C barley
2 C water or your favorite broth
Salt to taste
1/2 C edamame beans, cooked and not in their shells
1/2 C cherry tomatoes, halved
1/4 C fresh herbs, chopped (I used basil and mint)
Olive oil to taste
Splash Balsamic Vinegar
1. Put barley and water in pan and bring water to boil
2. Simmer for about 30 minutes until water is absorbed
3. Season with salt and let cool
4. Add rest of ingredients
Serves 3-4 as a side for lunch or 2 as a meal for dinner
