Today is Easter Sunday!  Let us remember Jesus’ journey.  He was a kind, warm, non judgmental man who treated everyone with love.  He was a son, a teacher, a carpenter who died and rose again.  Because of HIS resurrection we can start over, again and again.

Begin anew this Easter being like Jesus.   “WWJD–What Would Jesus Do”  This small shift in your thinking can turn your negative thoughts to positive.  With Jesus anger turns to laughter, hate turns to love, despair turns to hope, fear turns to faith, loneliness turns to acceptance.  HaPpy EaStEr!!!

You have heard that it was said, ‘Love your neighbor and hate your enemy. But I tell you, love your enemies and pray for those who persecute you–Matthew 5:43-44

Best Carrot Cake
This was stunning!  Worth the splurge and all calories.  It is VERY moist so be careful when transferring to cake plate to decorate.  I made the cakes one day ahead and decorated the next.  Refrigerate several hours before eating to make cutting easier.  I altered the icing just a bit….1 stick butter, 16 oz cream cheese and 2 C icing sugar and the vanilla.

  1. I loved this cake at Easter. It was beautiful and SUPER delicious. I just now came looking for the recipe for the girls. I wonder if it can be made into cupcakes. I’d like to bring it to Audrey’s end-of-year celebration.
