Zucchini Bread

I know I talk a lot about Godincidents but honestly I was so humbled while taking my first born to college last week and the number of times God spoke to us. Even though my daughter still thinks these are coincidences, I know better:) I know that God was loud and clear in letting us know this is the place for her!

On the plane we sat next to a lady who shared so many things with us. She is a restaurant owner and chef, her son owns a restaurant in my moms hometown, she spoke about family relationships in peril, taking risks, studying hard, enjoying life. Next we get to the car rental at the airport and one of the employees boards her horse at the barn where my daughter will ride. We check into our VRBO rental and the owner is on the parent committee at the college and has a daughter who is a senior who plays on the soccer team and is good friends with my daughters roommate.

After a day of getting settled in our rental, walking around town and opening a student bank account we headed out of town about 25 minutes to look at horse barns.  The first barn was great!  We didn’t think we could top it with the second barn but we did. After arriving at the second barn and talking to the owner we found that she went to my college (WHAT? A small college in Virginia? What are the chances?) and her father went to my step dad’s alma mater.  Within a few short minutes I was on the phone to my mom asking what rank my step dad had had in college.

Back on campus and we stroll to the the college bookstore and find out they have a yellow lab who comes to work with her owner everyday and gets lots of ear scratches from the college students.  My daughter is a huge animal lover and this made me feel really good knowing she could walk to the college store any time to get some much needed animal therapy!  We stayed for over 30 minutes talking to all the friendly ladies in the store.

Every where we turned people had a connection with us.   It was the most comforting and overwhelming week I had had in a long time.  Leaving my daughter was difficult but knowing that God was with us so many times the last few days made me believe she was going to be ok.

Isn’t it time you started rethinking how you see coincidences?  Try it this week!  I am sure you will begin to see how much God is talking to you with his spirit through friends, strangers, music, and maybe even animals!

Zucchini Bread

1-1/2 cup blanched almond flour ( I just did this from whole almonds)
2 teaspoons cinnamon
1 teaspoon baking soda
½ teaspoon salt
3 eggs, beaten
¼ cup honey
1 ripe banana
1/2 cup shredded unsweetened coconut (put this in food processor too because my shreds were big)
1 cup shredded, un-peeled zucchini (if you have time leave in a colander for about 10-15 minutes)

1. Preheat oven to 350 F
2. Combine the dry ingredients in a small bowl
3. Place the wet ingredients in the bowl of a stand mixer, then beat on medium for 1-2 minutes until frothy and fully combined. (I did this but honestly think in a regular bowl is fine)
4. Add the zucchini and beat again just enough to incorporate.  Slowly add the dry ingredients with the mixer running, until all of the flour mixture has been incorporated
5. Spoon the batter into 2 mini loaf pans. (I don’t have mini loaf pans so just put in a regular sized loaf pan)
6. Bake for 30-35 minutes until the middle is set and a toothpick comes out clean.
