Mexican Quinoa

Hi Everyone, so sorry I have not posted in such a long time! I am in the US for the summer enjoying family. When life gets busy try to slow down and enjoy the little things. I know this is a cliche saying but I honestly have felt God talking to me in the very smallest of things! Especially through my Christian radio station and red birds. That may sound strange but I LOVE my Christian radio here in the US, http://www.wayfm.com/ and I love Cardinals (red birds) and their chirp. I have been doing a lot of driving this summer getting kids to golf and horseback riding and that has impeded my time with family and the pool and beach and sometimes that can make me a tad frustrated since I only see my family once a year. But what I have noticed in all these car rides are the amazing messages and stories of GOD’s grace and beauty through WAYFM. I love listening to the music and hearing how people have overcome situations in their lives through Christian music and the amazing radio personalities who offer hope and encouragement! Often times when I finally get closer to home a red bird will fly across my site path or while on my lanai watching the rain fall or sunset I can hear them chirping. This reminds me GOD is with me.

I have a friend from many years back who is incarcerated and we recently reconnected with me visiting her after 15 years. It was a very emotional 30 minute visit. My friend was baptized some years ago while in prison and is a testament to trusting God’s plan in the most dire of circumstances. She mentors to the other girls and the staff and has touched and changed so many lives. She also sings and writes Christian music and is a very talented artist. While talking she shared several stories but one was how a bird got into the prison and came straight to her. She was like “what are the chances?” She went on to say she knew God was talking to her through this small bird. She believes this was a very large gesture of HIS love. There is no outdoor time allowed so having a piece of the outside come to her could only happen because of GOD. She loves GOD so much and truly believes GOD is with her daily!

Take some time to be mindful about the small things in your life this week and appreciate them in a new way!

“Though it is the smallest of all seeds, yet when it grows, it is the largest of garden plants and becomes a tree, so that the birds come and perch in its branches”-Matthew 13:32

Mexican Quinoa
My daughter made this for dinner the other night. She didn’t measure the spices so tweak them to your taste:)

1 cup quinoa

1 3/4 cups water (add a little cumin, smoked paprika and chili powder)

2 cups corn (cut right from the cob into the dish or in winter you can char the corn a little for a sweeter flavor)

1 large avocado, diced

1/3 C cherry tomatoes, halved

1 jalapeno, optionally seeded and finely diced

1 clove garlic, chopped

3 tablespoons olive oil

2 tablespoons lime juice (~1 lime)

1/4 cup cilantro, chopped

1/4 cup queso fresco, crumbled

2 green onions, sliced

Salt, pepper, chili powder, cumin and/or smoked paprika to taste

  1. Bring the water with spices and quinoa to a boil, reduce the heat and simmer, covered, until the quinoa is tender and has absorbed the water, about 15 minutes, remove from heat and let sit for 5 minutes, covered.
  2. Mix everything and serve warm or at room temperature.
