Almost Vegan Chocolate Chip Cookies with Whole Wheat

It is National Chocolate Chip Cookie Day!

One of my daughters is home from her first year of college and just made these yummy cookies! I usually shy away from using all whole wheat flour in recipes. I just don’t love the heavy, nutty flavor BUT these cookies are really tasty. I may be a convert!

One Bowl Almost Vegan Whole Wheat Chocolate Chip Cookies
This can easily be vegan using vegan chocolate chips

2/3 C virgin coconut oil
2/3 C white sugar
2/3 C Coconut Palm Sugar
1/2 C unsweetened Almond Milk (on the blog too and easy to make:)
2 t vanilla
2 1/2 C whole meal flour
1 t baking soda
1 t baking powder
1 t salt
10 ounces bag of semi sweet chocolate chips

  1. Heat oven to 350°F. In large bowl, mix coconut oil, granulated sugar and coconut palm sugar until well mixed. Stir in almond milk and vanilla.
  2. Stir in flour, baking soda, baking powder and salt until dough forms. Stir in chocolate chips. Drop dough by slightly rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  3. Bake 11 to 14 minutes or until edges are light brown and tops look set. Cool 1 minute on cookie sheets. Remove to cooling rack; cool completely. Store in tightly covered container.
