Packed with Protein Bites

Protein Packed Energy Bites

We made it through January! I hope everyone is warming up after the Polar Vortex that hit the US this week. These cold days are perfect for doing something inside. I chose to read my bible. If you are not in the habit of reading the bible, now is the perfect time to try. I am pretty guilty of not reading my bible consistently. I read the bible in prep for the bible study I attend but reading the bible isn’t my go to way of connecting with scripture.

I’d rather read quick scripture, watch Netflix, paint or Marie Kondo:))) Are y’all Marie Kondo’ing? Click here to watch trailer for Tidying Up  Even though I just moved and thought I was fairly organized it was therapeutic to go through my drawers and closets again to see if everything really sparked joy. I feel light and more organized. I have a few more things to accomplish and I have so much to donate and that makes me feel good.

The KonMari method has also helped me realize that to be joyful I need be open. Open to change. Open to honesty. Open to having a voice. Open to quiet time. And most importantly open to God’s plan for my life.

I got a new bible yesterday and opened it up and felt so overwhelmed. I didn’t want to start at the beginning so I started with Acts. I am going to read a little each day and then move on to John’s gospel. My point is that the small amount of quiet time I had snuggled up on the sofa with a hand knitted afghan, sparked joy. I had a sense of calm. There was no to-do list looming in the back of my mind. It was just me and Jesus:) JOY JOY JOY!

After I read the bible, I walked Zuzu and Lexi. I wasn’t even out of my small gated courtyard when I looked down and saw some mulch that was in the shape of a cross:) It made my day!

My takeaway is be open to finding joy in your life.  It doesn’t mean be open to read the bible like me but who knows being open to anything in your life that sparks joy could lead you to opening your bible too. What sparks joy for you?

God Bless,

1/4 t ground tumeric
1/4 C plus 1/8 C vanilla protein powder ( I like GNC brand)
1 T hemp hearts
1 T cocao nibs
2 T maple syrup

  1. Put everything in a bowl and mix
  2. Scoop heaping 1 T of mixture and form ball passing between hands and squeezing 8-10 times until it comes together and put on a cookie sheet that will fit in freezer
  3. Freeze for 30 minutes
  4. Transfer to a freezer safe container

This recipe can easily be modified to suit the ingredients in your pantry or flavors your family likes. Try flax meal, dates, and chocolate chips or dried cranberry and shredded coconut, or for a holiday version try molasses, ginger and allspice. Seriously whatever kind of cookie or muffin flavors you like can be made into a no bake energy bite.

  1. These sound yummy!! I miss trying all your goodies on Thursday mornings during our bible study.. One of my favorite memories of HK!! I now have a bible study on Thursday mornings here in NC… great group of women here also!! About reading the Bible, I think its a great thing to do during quiet time.. I also agree that it is not always our first choice but I believe if we spend a little time in God’s word daily it will definitely benefit us. We started the book of Romans in January in our bible study group.
I have to say that one thing that gives me joy is being around Christian women.. something that you helped make possible in HK and something that I now look for when I move to a new place..

    • Awe….I miss all of you! You were my number one recruiter:) My daily bible verse for today definitely reiterates how reading the bible is impactful when we invite the HS in:)

I WILL FIGHT FOR YOU; YOU NEED ONLY TO BE still. I know how weary you are, My child. You have been struggling just to keep your head above water, and your strength is running low. Now is the time for you to stop striving and let Me fight for you. I know this is not easy for you to do. You feel as if you must keep struggling in order to survive, but I am calling you to rest in Me. I am working on your behalf; so be still, and know that I am God.

Quieting your body is somewhat challenging for you, but stilling your mind may often seem downright impossible. In your striving to feel secure, you have relied too heavily on your own thinking. This struggle to be in control has elevated your mind to a position of autonomy. So you need the intervention of the Holy Spirit. Ask Him to control your mind more and more— soothing you from the inside out. Take time to rest in the shadow of the Almighty while I fight for you.

The LORD will fight for you; you need only to be still.
      —Exodus 14:14

Be still, and know that I am God; I will be exalted among the nations, I will be exalted in the earth!
      —Psalm 46:10 NKJV

The mind of sinful man is death, but the mind controlled by the Spirit is life and peace.
      —Romans 8:6

He who dwells in the shelter of the Most High will rest in the shadow of the Almighty.
      —Psalm 91:1
